Instructions

  1. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated.
  2. Press the mixture into the bottom of mini cheesecake cups or a muffin tin lined with cupcake liners.
  3. In a large mixing bowl, beat the softened cream cheese until smooth.
  4. Gradually add powdered sugar and vanilla extract, mixing until well combined.
  5. In a separate bowl, whip the heavy cream until stiff peaks form.
  6. Gently fold the whipped cream into the cheesecake mixture until fully combined and fluffy.
  7. Spoon or pipe the cheesecake filling onto the prepared crust evenly, topping each one with sliced strawberries and blueberries to form the red, white, and blue layers.
  8. Cover the cheesecakes with plastic wrap and chill in the refrigerator for at least 2 hours until firm.
  9. Once chilled, remove from the fridge, top with extra whipped cream if desired, and serve to your guests!
