Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, allowing some overhang for easy removal later.
  2. In a mixing bowl, cream together softened butter and granulated sugar until fluffy. Gradually mix in flour and salt until a soft dough forms. Press this dough evenly into the prepared pan and smooth it out.
  3. In a medium saucepan over medium heat, combine raspberries, sugar, cornstarch, and lemon juice. Cook while gently stirring until raspberries break down and the mixture thickens—about 5-7 minutes. Once done, remove from heat and let it cool slightly.
  4. In a separate bowl, mix together flour, oats, brown sugar, melted butter, and cinnamon until crumbly.
  5. Spread the raspberry mixture over the shortbread base evenly, then sprinkle the streusel topping generously over the raspberries.
