- 2 cups granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon

- 1 cup buttermilk
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup crushed pineapple, drained
- 1 cup shredded coconut
- 1 cup chopped pecans or walnuts (optional)
- 1 cup mini marshmallows (optional)
Instructions
- Preheat your oven to 350°F. Grease and flour a 9×13-inch baking dish, or line it with parchment paper for easy removal.
- In a large mixing bowl, whisk together the flour, sugar, baking soda, salt, cinnamon, and nutmeg until well combined.
- In another bowl, combine the buttermilk, vegetable oil, eggs, and vanilla extract. Whisk until smooth and well blended.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Fold in the crushed pineapple, shredded coconut, and nuts if using. Add mini marshmallows for extra sweetness if desired.
- Pour the batter into the prepared baking dish and spread it out evenly.
- Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
