- 1 cup fresh peaches, diced (or canned, drained, and chopped)
- 1 cup all-purpose flour
- ½ cup rolled oats
- ½ cup sugar
- ½ cup brown sugar
- ½ cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon cinnamon
- a pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, sugar, and brown sugar until fluffy. Add in the egg and vanilla extract and mix until well combined.
- In a separate bowl, mix together the flour, oats, baking powder, cinnamon, and salt. Gradually add this dry mixture to the wet mixture until just combined.
- Gently fold in the diced peaches, stirring carefully.
- Use a spoon or cookie scoop to drop ladles of dough onto a lined baking sheet, leaving space between each cookie.
- Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the edges are golden and the centers look set.
- Remove from the oven and let cookies sit on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
- Enjoy warm or at room temperature.
