Description
A simple and delicious recipe for making fresh pasta at home, known as Pasta Fresca.
Ingredients

- 2 cups all-purpose flour
- 3 large eggs
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- 1/4 cup water (as needed)
- Fresh basil leaves, for garnish
- Grated Parmesan cheese, for serving
Instructions
- Make the pasta dough by mounding the flour on a clean surface and creating a well in the center.
- Add the eggs, salt, and olive oil into the well and whisk gently with a fork, incorporating the flour.
- Knead the dough for about 8-10 minutes until smooth and elastic, adding water as needed.
- Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.
- Divide the dough into four equal pieces and keep covered.
- Roll out one piece of dough at a time to your desired thickness using a pasta machine or rolling pin.
- Cut the rolled-out pasta into your preferred shape and dust with flour to prevent sticking.
- Bring a large pot of salted water to a boil and cook the fresh pasta for 2-4 minutes.
- Drain the pasta, reserving a cup of pasta water.
- Toss the pasta with your favorite sauce or olive oil, reserved pasta water, and fresh basil leaves.
- Serve immediately, garnished with grated Parmesan cheese.
Notes
- Fresh pasta cooks much quicker than dried pasta, so monitor it closely.
- Feel free to experiment with different shapes of pasta.
- Store any unused dough wrapped in plastic wrap in the refrigerator for up to 2 days.
