- 2 large russet potatoes
- 2 tablespoons olive oil
- 1 tablespoon truffle oil
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/2 cup freshly grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- Wash and peel the russet potatoes, then cut them into thin strips, about 1/4 inch thick.
- Soak the potato strips in cold water for about 30 minutes to remove excess starch.
- Drain the potatoes and pat them dry with a clean kitchen towel.
- Toss the dried potato strips with olive oil, truffle oil, sea salt, and black pepper in a large bowl.
- Spread the fries out in a single layer on the prepared baking sheet.
- Bake for about 25 to 30 minutes, flipping them halfway through until golden brown and crispy.
- Remove from the oven and immediately sprinkle freshly grated Parmesan cheese over the hot fries.
- Garnish with chopped fresh parsley and serve hot.
