  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried rosemary)
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, zested and juiced
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme (optional)
  • Fresh rosemary sprigs for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the olive oil, chopped rosemary, minced garlic, salt, black pepper, lemon zest, lemon juice, paprika, onion powder, and thyme if using. Whisk until well blended.
  3. Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Let it marinate for at least 30 minutes, or refrigerate for a few hours or overnight.
  4. Line a large baking sheet with parchment paper or aluminum foil. Place the chicken thighs skin-side up on the baking sheet, spaced out for even roasting.
  5. Roast in the preheated oven for about 35 to 40 minutes, or until golden brown and the internal temperature reaches 165°F (75°C). Broil for an additional 2 to 3 minutes for extra crispiness if desired.
  6. Remove from the oven and let the chicken rest for about 5 minutes before serving. Garnish with fresh rosemary sprigs if desired.
