  • 4 green cardamom pods
  • 1 cinnamon stick
  • 1 cup mixed vegetables (carrots, peas, green beans, and bell peppers), chopped
  • 1 large tomato, chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 4 cups vegetable broth or water
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup fried onions (for garnish, optional)
  • Lemon wedges (for serving)

Instructions

  1. Heat the vegetable oil or ghee in a large, heavy-bottomed pot over medium heat. Add cumin seeds and mustard seeds, letting them sizzle until they start to pop.
  2. Add the sliced onions and sauté until golden brown, about 5-7 minutes. Stir in minced garlic, grated ginger, and slit green chilies, cooking for another minute.
  3. Add bay leaf, whole cloves, green cardamom pods, and cinnamon stick. Stir to infuse the spices for a minute or two.
  4. Add chopped mixed vegetables and cook for about 5 minutes, stirring occasionally.
  5. Toss in chopped tomato, turmeric powder, garam masala, and salt. Cook until tomatoes soften, about 3-4 minutes.
  6. Add soaked and drained basmati rice, gently folding it into the vegetable mixture.
  7. Pour in vegetable broth or water, ensuring the rice is fully submerged. Bring to a boil, then reduce heat to low.
  8. Cover the pot with a tight-fitting lid and let it simmer for about 20 minutes, or until the rice is cooked and has absorbed all the liquid.
  9. Turn off the heat and let the biryani sit, covered, for another 10 minutes.
  10. Remove the lid and fluff the biryani gently with a fork. Stir in chopped cilantro and mint leaves. Serve hot, garnished with fried onions and lemon wedges.
