Description

One-Dish Roasted Potatoes, Apples & Chicken Sausage is an easy, sweet-and-savory oven dinner made in one baking dish. Crisp-edged red potatoes, tender apples, caramelized onion, and savory chicken herb sausage roast together in a light tangy-sweet cider, mustard, and honey seasoning. It is a cozy, dairy-free weeknight meal with minimal hands-on work and an especially good fit for fall.

  • 1 pound red potatoes, cut into ¾-inch bite-size pieces

  • 1 tablespoon canola oil

  • 2 firm red apples, such as Honeycrisp, Fuji, Pink Lady, or Gala, cut into bite-size chunks

  • 1 medium yellow onion, cut into bite-size chunks

  • 4 fully cooked chicken herb sausage links, about 12 ounces total, sliced into ½-inch rounds

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon honey

  • ½ teaspoon ground mustard

  • ¼ teaspoon kosher salt, plus more to taste

  • ¼ teaspoon freshly ground black pepper, plus more to taste


Instructions

  • Preheat the oven. Place a rack in the center position and heat the oven to 425°F / 220°C.

  • Season the potatoes. Add the potatoes to a 2-quart baking dish. Drizzle with the canola oil, season with salt and pepper, and toss until the pieces are evenly coated.

  • Roast the potatoes. Roast until the potatoes begin to soften and develop light golden edges, about 20 minutes.

  • Prepare the remaining ingredients. While the potatoes roast, chop the apples and onion into bite-size pieces. Slice the chicken sausage into rounds.

  • Add the sausage mixture. Remove the baking dish from the oven and reduce the oven temperature to 375°F / 190°C. Add the apples, onion, and sliced sausage to the potatoes. Drizzle with the apple cider vinegar and honey, then sprinkle with the ground mustard. Toss thoroughly so everything is evenly coated.

  • Finish roasting. Return the dish to the oven. Roast until the potatoes are fork-tender, the apples are tender but still hold their shape, the onion is lightly caramelized, and the sausage is hot with browned edges, about 25 to 30 minutes. Stir once halfway through for even browning.

  • Rest and serve. Let the dish rest for 5 minutes. Taste and add more salt and pepper if needed, then serve warm.
