Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons Old Bay seasoning
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 pound baby potatoes, halved
  • 4 cloves garlic, minced
  • 2 tablespoons fresh thyme leaves (or 1 tablespoon dried thyme)
  • 1 cup chicken broth
  • 2 tablespoons unsalted butter
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken thighs with Old Bay seasoning, paprika, salt, and pepper, rubbing it under the skin.
  2. Heat olive oil in a large skillet over medium-high heat and sear the chicken thighs skin-side down for 5 to 7 minutes until golden brown.
  3. Flip the chicken and cook for another 5 minutes, then remove from the skillet and set aside.
  4. Add halved baby potatoes to the skillet and cook for about 5 minutes until they start to color.
  5. Add minced garlic and thyme, stirring for about a minute until fragrant.
  6. Pour in chicken broth, scraping up brown bits from the skillet, and nestle the chicken thighs back in, skin-side up.
  7. Bring to a gentle simmer, cover, and cook for 25 to 30 minutes until chicken is cooked through and potatoes are tender.
  8. Remove the lid, stir in butter, and let it melt into the broth.
  9. Serve chicken thighs over garlic thyme potatoes, spooning broth over the top and garnishing with fresh parsley.
