Oden Noodle Soup is a flavorful and easy-to-make dish that combines noodles and fish cakes in a savory broth.
Ingredients

- Fish cakes (any kind works – about 1 cup or to your liking)
- Noodles (we used regular pasta, but soba or ramen works too!)
- 2 tbsp fish sauce
- 2 tbsp soy sauce
- Chopped green onion (for garnish)
Instructions
- Cook the noodles – Boil them until 80% done (just under al dente) so they can finish cooking in the broth.
- Make the broth – In another pot, boil 2.5–3 cups water. Add 2 tbsp fish sauce and 2 tbsp soy sauce. Optional: a piece of dried kelp or a splash of mirin for extra depth.
- Add noodles and fish cakes – Put the noodles and fish cakes into the broth. Let them simmer together for 3–5 minutes to finish cooking and soak up the broth.
- Finish with green onions – Top with chopped green onion for freshness. For extra spice, add chili flakes or a few drops of chili oil!
Notes
- Feel free to customize the fish cakes based on your preference.
- Adjust the seasoning according to taste.
- For a vegetarian version, substitute fish sauce with soy sauce or a vegetarian alternative.
