- 1 ½ cups rolled oats
- 1 cup all-purpose flour
- 1 cup brown sugar, packed
- ½ teaspoon baking soda

- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- ¼ cup sour cream
- 1 cup heavy cream
- ¼ cup powdered sugar
- ½ teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the rolled oats, flour, brown sugar, baking soda, and salt.
- Pour in the melted butter and vanilla extract, and mix until well combined.
- Press the mixture into the bottom of a 9-inch springform pan to form an even layer.
- Bake for 10-12 minutes or until golden brown. Remove and allow to cool.
- In another bowl, beat the softened cream cheese and granulated sugar until smooth and fluffy.
- Mix in the vanilla extract.
- Add the eggs one at a time, mixing well after each addition.
- Fold in the sour cream until smooth.
- Pour the cheesecake filling into the cooled oatmeal crust.
- Gently smooth the top and bake for 50-60 minutes or until the center is set and only slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for one hour.
- Transfer to the fridge to cool completely, ideally overnight.
- Once the cheesecake is cold, whip the heavy cream with powdered sugar and vanilla until soft peaks form.
- Spread the whipped cream topping over the cheesecake.
- Carefully remove the sides of the springform pan.
- Slice your cheesecake and indulge in every creamy, chewy bite!
