  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • ¼ cup sour cream
  • 1 cup heavy cream
  • ¼ cup powdered sugar
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the rolled oats, flour, brown sugar, baking soda, and salt.
  3. Pour in the melted butter and vanilla extract, and mix until well combined.
  4. Press the mixture into the bottom of a 9-inch springform pan to form an even layer.
  5. Bake for 10-12 minutes or until golden brown. Remove and allow to cool.
  6. In another bowl, beat the softened cream cheese and granulated sugar until smooth and fluffy.
  7. Mix in the vanilla extract.
  8. Add the eggs one at a time, mixing well after each addition.
  9. Fold in the sour cream until smooth.
  10. Pour the cheesecake filling into the cooled oatmeal crust.
  11. Gently smooth the top and bake for 50-60 minutes or until the center is set and only slightly jiggly.
  12. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for one hour.
  13. Transfer to the fridge to cool completely, ideally overnight.
  14. Once the cheesecake is cold, whip the heavy cream with powdered sugar and vanilla until soft peaks form.
  15. Spread the whipped cream topping over the cheesecake.
  16. Carefully remove the sides of the springform pan.
  17. Slice your cheesecake and indulge in every creamy, chewy bite!
