  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional)
  • Vegetable oil, for frying
  • 1/2 cup pure maple syrup
  • 1/4 cup Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • 2 cups all-purpose flour (for waffles)
  • 2 tablespoons sugar
  • 1 tablespoon baking powder (for waffles)
  • 1/2 teaspoon salt (for waffles)
  • 2 large eggs
  • 1 and 3/4 cups milk
  • 1/2 cup melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Marinate the chicken in a mixture of buttermilk, garlic powder, onion powder, smoked paprika, salt, and pepper for at least 1 hour.
  2. Prepare the glaze by whisking together maple syrup, Dijon mustard, apple cider vinegar, Worcestershire sauce, salt, and pepper in a saucepan over medium heat. Simmer for about 5 minutes.
  3. For the waffles, mix flour, sugar, baking powder, and salt in one bowl. In another bowl, beat eggs and mix in milk, melted butter, and vanilla extract. Combine wet and dry ingredients.
  4. Heat the waffle iron and cook the batter until golden brown. Keep warm in a low oven.
  5. Heat vegetable oil in a skillet. Dredge marinated chicken in a flour mixture and fry for 6-8 minutes per side until golden brown and cooked through.
  6. Serve a warm waffle topped with fried chicken and drizzle with the mustard and maple glaze.
