Ingredients

  • 2 pounds fresh mussels, cleaned and debearded
  • 4 cups seafood stock or chicken broth
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup scallions, sliced (white and green parts separated)
  • 1 medium potato, peeled and diced
  • 1 cup heavy cream
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
  2. Toss in the minced garlic and the white parts of the scallions, cooking for another minute until fragrant.
  3. Add the diced potato to the pot and stir it all together.
  4. Pour in the seafood stock or chicken broth, bringing the mixture to a gentle boil.
  5. Reduce the heat and let it simmer for about 15 minutes, or until the potatoes are tender.
  6. While the soup is simmering, prepare the mussels. Rinse them under cold water, discarding any that are open and don’t close when tapped.
  7. Once the potatoes are tender, add the mussels to the pot along with the heavy cream and smoked paprika. Stir gently and cover the pot.
  8. Cook for about 5 to 7 minutes, or until the mussels have opened up. Discard any mussels that remain closed.
  9. Season the soup with salt and black pepper to taste.
  10. Stir in the green parts of the scallions just before serving for a fresh burst of flavor.
  11. Ladle the soup into bowls, garnishing with chopped parsley. Serve hot with crusty bread on the side for dipping.
