Description
Mushroom Rice – Sotbap is a flavorful dish made with short-grain rice, sautéed mushrooms, and a blend of savory sauces, perfect as a side or main course.

- 1 cup short-grain rice (sushi rice or similar)
- 2 cups water or low-sodium chicken broth
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms (shiitake, cremini, or button), sliced
- 1/2 cup frozen peas (optional)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 green onions, chopped (for garnish)
- Sesame seeds (for garnish, optional)
Instructions
- Rinse the rice under cold water until the water runs clear. Drain well and set aside.
- In a medium saucepan, combine the rinsed rice and water or chicken broth. Bring it to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 18-20 minutes, or until the liquid is absorbed and the rice is tender.
- Remove from heat and let it sit, covered, for another 10 minutes to steam.
- While the rice is cooking, heat the sesame oil and vegetable oil in a large skillet or wok over medium heat.
- Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.
- Stir in the minced garlic and sliced mushrooms. Cook for another 5-7 minutes, or until the mushrooms are tender.
- If using peas, toss them in during the last couple of minutes of cooking to heat them through.
- Add the cooked rice to the skillet. Drizzle the soy sauce and oyster sauce (if using) over the rice, and sprinkle in the salt and black pepper.
- Gently fold everything together until the rice is well-coated and heated through.
- Taste and adjust the seasoning if needed.
- Transfer the mushroom rice to a serving dish and garnish with chopped green onions and sesame seeds if desired. Serve warm.
Notes
- For a vegetarian version, omit the oyster sauce.
- Feel free to add other vegetables like bell peppers or carrots for extra flavor and nutrition.
