Mushroom Rice – Sotbap is a flavorful dish made with short-grain rice, sautéed mushrooms, and a blend of savory sauces, perfect as a side or main course.


Ingredients

  • 1 cup short-grain rice (sushi rice or similar)
  • 2 cups water or low-sodium chicken broth
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms (shiitake, cremini, or button), sliced
  • 1/2 cup frozen peas (optional)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 green onions, chopped (for garnish)
  • Sesame seeds (for garnish, optional)

Instructions

  1. Rinse the rice under cold water until the water runs clear. Drain well and set aside.
  2. In a medium saucepan, combine the rinsed rice and water or chicken broth. Bring it to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 18-20 minutes, or until the liquid is absorbed and the rice is tender.
  4. Remove from heat and let it sit, covered, for another 10 minutes to steam.
  5. While the rice is cooking, heat the sesame oil and vegetable oil in a large skillet or wok over medium heat.
  6. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.
  7. Stir in the minced garlic and sliced mushrooms. Cook for another 5-7 minutes, or until the mushrooms are tender.
  8. If using peas, toss them in during the last couple of minutes of cooking to heat them through.
  9. Add the cooked rice to the skillet. Drizzle the soy sauce and oyster sauce (if using) over the rice, and sprinkle in the salt and black pepper.
  10. Gently fold everything together until the rice is well-coated and heated through.
  11. Taste and adjust the seasoning if needed.
  12. Transfer the mushroom rice to a serving dish and garnish with chopped green onions and sesame seeds if desired. Serve warm.

Notes

  • For a vegetarian version, omit the oyster sauce.
  • Feel free to add other vegetables like bell peppers or carrots for extra flavor and nutrition.
