Instructions
- Boil the cubed potatoes in a large pot of salted water until fork-tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper, and mash until creamy and smooth.
- Preheat your oven to 400°F (200°C).
- Spoon the mashed potato mixture into greased muffin tins, creating a slight indentation in the center for toppings.
- Sprinkle cheese on top of each cup and bake in the preheated oven for 15-20 minutes until golden and crispy.
- Remove from the oven and add any additional toppings of your choice before serving warm.
