  • 4 cups water or broth (chicken or vegetable)
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 small bell pepper (red, green, or yellow), diced
  • 1 tablespoon lemon juice (freshly squeezed)

Instructions

  1. In a large saucepan, bring 4 cups of water or broth to a boil.
  2. Slowly add 1 cup of grits while stirring continuously.
  3. Reduce heat to low and cover. Cook for about 20-25 minutes, occasionally stirring until creamy.
  4. Add 2 tablespoons of butter, and season with salt and pepper.
  5. In a large skillet, melt 1 tablespoon of butter over medium heat.
  6. Add the diced onion and bell pepper, cooking until softened (about 3-4 minutes).
  7. Stir in the minced garlic and cook for an additional minute.
  8. Add the shrimp to the skillet and season with salt and pepper.
  9. Cook for 4-5 minutes or until the shrimp turn pink and opaque.
  10. Drizzle with lemon juice and toss everything together.
  11. Spoon the creamy grits onto plates or bowls and top with the sautéed shrimp mixture.
  12. Garnish with chopped chives or green onions for a fresh finish!
