A refreshing and healthy low carb dinner option featuring zucchini noodles, shrimp or chicken, and fresh vegetables, perfect for summer nights.


Ingredients

Scale
  • 4 medium zucchinis, spiralized
  • 1 lb shrimp or chicken strips
  • 3 garlic cloves, minced
  • 1 cup cherry tomatoes, halved
  • ¼ cup fresh basil, chopped
  • 2 tbsp olive oil
  • Salt, pepper, and red pepper flakes to taste

Instructions

  1. Heat olive oil in a large skillet. Cook protein until done, then remove and set aside.
  2. In the same skillet, sauté garlic and cherry tomatoes for 2 minutes.
  3. Add zucchini noodles and cook for 2-3 minutes (don’t overcook).
  4. Return protein to the pan, add basil and seasoning. Toss gently.
  5. Serve right away.

Notes

  • For a vegetarian option, omit the protein and add more vegetables.
  • Adjust the amount of red pepper flakes based on your spice preference.
