Lazanki – Polish Pasta with Kielbasa & Sauerkraut Awaits!

Lazanki is a traditional Polish dish made with wide egg noodles, kielbasa, and sauerkraut, offering a hearty and comforting meal.

  • 2 cups wide egg noodles or lazanki pasta
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound kielbasa, sliced into half-moons
  • 2 cups sauerkraut, drained and rinsed
  • 1 teaspoon caraway seeds (optional)
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add the egg noodles or lazanki pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, or until it becomes translucent. Stir in the minced garlic and cook for an additional minute, until fragrant.
  3. Add the sliced kielbasa to the skillet and cook until browned, about 5-7 minutes. The kielbasa should be nice and crispy on the edges.
  4. Stir in the drained sauerkraut and caraway seeds, if using. Cook for another 5 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.
  5. Add the cooked pasta to the skillet, tossing everything together until the pasta is well coated with the kielbasa and sauerkraut mixture. Cook for an additional 2-3 minutes, just to heat everything through.
  6. Remove from heat and garnish with fresh parsley before serving. Enjoy this hearty dish warm, and let the comforting flavors take you straight to Poland!

Notes

  • For a vegetarian version, substitute kielbasa with a plant-based sausage.
