Ingredients

  • 2 boneless chicken breasts (or pork loin), pounded to an even thickness
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour
  • 1 large egg, beaten
  • 1 cup panko breadcrumbs
  • Vegetable oil, for frying
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 2 carrots, sliced
  • 2 medium potatoes, diced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons curry powder
  • 1 tablespoon soy sauce
  • 2 cups chicken broth
  • 1 tablespoon honey (optional)
  • Salt and pepper, to taste
  • Cooked rice, for serving

Instructions

  1. Season the chicken breasts (or pork) with salt and pepper on both sides.
  2. Set up a breading station with three shallow dishes: one with flour, one with the beaten egg, and one with panko breadcrumbs.
  3. Dredge each piece of meat in flour, shaking off the excess, then dip it into the egg, allowing any excess to drip off.
  4. Coat it in panko breadcrumbs, pressing gently to ensure the crumbs stick well.
  5. In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat.
  6. Once the oil is hot, carefully add the breaded meat and fry for about 4-5 minutes on each side, or until golden brown and cooked through.
  7. Remove from the skillet and let it drain on paper towels.
  8. In a large pot, heat 1 tablespoon of vegetable oil over medium heat.
  9. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
  10. Toss in the sliced carrots and diced potatoes, stirring occasionally for another 5 minutes.
  11. Add the minced garlic and ginger, cooking for an additional minute until fragrant.
  12. Sprinkle in the curry powder and stir well to coat the vegetables.
  13. Pour in the chicken broth and soy sauce, bringing the mixture to a gentle simmer.
  14. If desired, add honey for sweetness.
  15. Let the curry simmer for about 20-25 minutes, or until the vegetables are tender.
  16. Taste and season with salt and pepper as needed.
  17. To serve, slice the Katsu into strips and place it over a bed of fluffy cooked rice.
  18. Ladle the rich curry sauce over the top and enjoy!
