  • 2 medium carrots, sliced
  • 2 medium potatoes, diced
  • 3 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon curry powder (adjust to taste)
  • 1 tablespoon ketchup
  • 1 tablespoon honey (optional)
  • 1/4 cup frozen peas (optional)
  • Salt and pepper to taste
  • Cooked rice, for serving

Instructions

  1. In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they become translucent and fragrant, about 5 minutes.
  2. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes.
  3. Add the sliced carrots and diced potatoes, stirring everything together. Cook for another 3-4 minutes.
  4. Pour in the chicken broth, soy sauce, Worcestershire sauce, curry powder, ketchup, and honey (if using). Stir well to combine.
  5. Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. If adding peas, toss them in during the last 5 minutes of cooking.
  7. Taste and season with salt and pepper as needed. Adjust curry powder for spiciness if desired.
  8. Serve hot over a bed of fluffy cooked rice.
