- 4 ripe bananas, mashed
- 1 cup granulated sugar
- 1/4 cup fresh lime juice
- 1/4 cup water
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 tablespoon grated fresh ginger (optional)
Instructions
- Peel the ripe bananas and mash them in a large mixing bowl until smooth.
- In a medium-sized saucepan, combine the mashed bananas, granulated sugar, lime juice, and water. Stir until the sugar is well incorporated.
- Place the saucepan over medium heat and bring the mixture to a gentle boil.
- Once it starts bubbling, reduce the heat to low and let it simmer, stirring occasionally.
- After about 15-20 minutes, add the vanilla extract, ground cinnamon, ground nutmeg, and salt. Optionally, add grated fresh ginger.
- Let it simmer for another 10-15 minutes until the jam reaches your desired thickness.
- To test the consistency, drop a spoonful of the jam onto a cold plate and check if it holds its shape.
- Once ready, remove from heat and let it cool slightly before pouring into sterilized jars.
- Seal the jars tightly and allow them to cool completely at room temperature.
- Store in the refrigerator for up to two weeks.
