  • 1 cup granulated sugar
  • 1/4 cup fresh lime juice
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 tablespoon grated fresh ginger (optional)

Instructions

  1. Peel the ripe bananas and mash them in a large mixing bowl until smooth.
  2. In a medium-sized saucepan, combine the mashed bananas, granulated sugar, lime juice, and water. Stir until the sugar is well incorporated.
  3. Place the saucepan over medium heat and bring the mixture to a gentle boil.
  4. Once it starts bubbling, reduce the heat to low and let it simmer, stirring occasionally.
  5. After about 15-20 minutes, add the vanilla extract, ground cinnamon, ground nutmeg, and salt. Optionally, add grated fresh ginger.
  6. Let it simmer for another 10-15 minutes until the jam reaches your desired thickness.
  7. To test the consistency, drop a spoonful of the jam onto a cold plate and check if it holds its shape.
  8. Once ready, remove from heat and let it cool slightly before pouring into sterilized jars.
  9. Seal the jars tightly and allow them to cool completely at room temperature.
  10. Store in the refrigerator for up to two weeks.
