Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the lemon zest and vanilla extract.
  4. In a separate bowl, combine the all-purpose flour and baking powder. Gradually add the dry mixture to the wet ingredients, mixing until a soft dough forms.
  5. Using your hands, form the dough into small balls and place them onto the baking sheet about 2 inches apart.
  6. Bake in the preheated oven for 12–15 minutes, or until the edges are golden brown.
  7. Allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack.
  8. While the cookies are cooling, in a small bowl, combine the powdered sugar with a little water or lemon juice to create a smooth icing.

  10. Once the cookies are cooled, drizzle or spread the icing on top and let it set before serving.
