Italian Christmas Cookies

Ingredients:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 cups powdered sugar
  • 3-4 tablespoons milk
  • 1/2 teaspoon almond extract
  • Sprinkles for decorating

Directions:

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or lightly grease them.
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla and almond extracts.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  4. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  5. Bake for 8-10 minutes, or until the bottoms are lightly golden. Remove from the oven and let cool on wire racks.
  6. In a small bowl, whisk together the powdered sugar, milk, and almond extract to make the glaze. Adjust the consistency by adding more milk if necessary.
  7. Dip the tops of the cooled cookies into the glaze and then sprinkle with festive decorations.
  8. Allow the glaze to set before serving or storing in an airtight container.
