- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup long-grain white rice, rinsed and drained
- 1 can (14.5 ounces) diced tomatoes with green chilies, undrained
- 1 cup low-sodium chicken or vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup frozen corn (optional)
- 1/4 cup chopped fresh cilantro (for garnish)
- Lime wedges (for serving)
Instructions
- Set your Instant Pot to the ‘Sauté’ function and heat the olive oil for a minute.
- Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and sauté for another 30 seconds until fragrant.
- Stir in the rinsed rice, coating it well with the oil and onion mixture.
- Pour in the can of diced tomatoes with their juices and the chicken or vegetable broth, stirring to combine.
- Sprinkle in the ground cumin, chili powder, salt, and black pepper, stirring to distribute the spices.
- If using, add the corn for sweetness and color.
- Close the lid of the Instant Pot, ensuring the valve is set to ‘Sealing.’ Select ‘Manual’ or ‘Pressure Cook’ and set the timer for 4 minutes.
- After cooking, carefully do a quick release of the pressure by turning the valve to ‘Venting.’
- Once the steam has escaped and the pin drops, open the lid and fluff the rice gently with a fork.
- Serve hot, garnished with fresh cilantro and lime wedges on the side.

- This dish pairs well with tacos, enchiladas, or can be enjoyed on its own.
- Adjust the spices according to your taste preference.
- For a vegetarian version, use vegetable broth instead of chicken broth.
