  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice, rinsed and drained
  • 1 can (14.5 ounces) diced tomatoes with green chilies, undrained
  • 1 cup low-sodium chicken or vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen corn (optional)
  • 1/4 cup chopped fresh cilantro (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Set your Instant Pot to the ‘Sauté’ function and heat the olive oil for a minute.
  2. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  3. Add the minced garlic and sauté for another 30 seconds until fragrant.
  4. Stir in the rinsed rice, coating it well with the oil and onion mixture.
  5. Pour in the can of diced tomatoes with their juices and the chicken or vegetable broth, stirring to combine.
  6. Sprinkle in the ground cumin, chili powder, salt, and black pepper, stirring to distribute the spices.
  7. If using, add the corn for sweetness and color.
  8. Close the lid of the Instant Pot, ensuring the valve is set to ‘Sealing.’ Select ‘Manual’ or ‘Pressure Cook’ and set the timer for 4 minutes.
  9. After cooking, carefully do a quick release of the pressure by turning the valve to ‘Venting.’
  10. Once the steam has escaped and the pin drops, open the lid and fluff the rice gently with a fork.
  11. Serve hot, garnished with fresh cilantro and lime wedges on the side.
