Description
Indonesian Yellow Rice, known as Nasi Kuning, is a flavorful and aromatic dish made with rice, coconut milk, and spices, often served during special occasions.
Ingredients

- 2 cups Long Grain Rice like Jasmine or Basmati
- 2 cups Water
- 1/2 cup Coconut Milk
- 1 tbsp Turmeric Powder
- 1 Lemongrass Stalk bruised
- 2 Bay Leaves
- 2 Lime Leaves
- 1/2 tsp Kosher Salt
Instructions
- Wash the rice in cold water until it runs clear.
- Bring water and coconut milk to a boil in a large skillet and then add rice and the rest of the ingredients. Stir to mix.
- Lower the heat to simmer. Cover with a lid and let cook for around 20 minutes. Turn off the heat but do not remove the lid yet. Let it rest for 10 minutes.
- Uncover the lid and discard the lemongrass, bay leaf and lime leaf.
- Fluff the rice with a fork. Serve hot.
Notes
- This dish is often served with various side dishes during celebrations.
- Adjust the amount of turmeric for a deeper yellow color.
- Can be paired with fried chicken or vegetables for a complete meal.
