Instructions

  1. In a saucepan, combine 1 cup of the heavy cream and the dried culinary lavender over medium heat. Bring the mixture to a gentle simmer. Remove from heat and let it steep for about 15-20 minutes.
  2. Strain the cream through a fine mesh sieve to remove the lavender buds. Return the creamed lavender liquid to the saucepan.
  3. Add the remaining 1 cup of heavy cream, whole milk, honey, vanilla extract, and a pinch of salt to the infused cream. Whisk together until the honey is fully dissolved.
  4. Transfer the mixture to the refrigerator for at least 2 hours, or until it’s completely chilled.
  5. Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions, typically around 20-30 minutes until it reaches a soft-serve consistency.
  6. Transfer the ice cream to an airtight container and freeze for at least 4 hours to firm up before serving.
  7. Scoop into bowls, and if desired, garnish with additional sprigs of lavender or a drizzle of honey.
