- 1/2 cup honey
- 2 tablespoons chipotle pepper in adobo sauce (finely chopped)
- 2 tablespoons soy sauce or tamari (for gluten-free)
- 2 cloves garlic (minced)

Instructions
- In a bowl, mix together honey, chopped chipotle peppers, soy sauce, minced garlic, and a pinch of salt and pepper.
- Place the chicken breasts in a shallow dish or resealable bag and pour the marinade over. Ensure each piece is well-coated. Let it marinate for at least 15 minutes (or up to overnight in the refrigerator for deeper flavor).
- Heat olive oil in a large skillet over medium-high heat.
- Once hot, remove the chicken from the marinade (reserving the marinade) and cook for about 5-7 minutes on each side until golden brown and cooked through.
- Pour the reserved marinade into the skillet and let it simmer for another 2-3 minutes, allowing the sauce to thicken slightly.
- Once the chicken is cooked and the sauce is thick and bubbly, remove from heat, slice, and serve garnished with cilantro or green onions if desired!
