- 1 pound Carrots, peeled and cut into sticks
- 2 tablespoons Honey
- 2 tablespoons Balsamic vinegar
- 1 tablespoon Olive oil
- ½ teaspoon Salt
- ¼ teaspoon Black pepper
- Fresh parsley, for garnish (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Peel the carrots and cut them into 1-inch wide sticks.
- In a mixing bowl, whisk together honey, balsamic vinegar, olive oil, salt, and black pepper until well combined.
- Place the carrot sticks in a bowl or baking dish, pour the honey-balsamic mixture over them, and toss until they are evenly coated.
- Arrange the coated carrots in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through, until tender and caramelized.
- Remove the carrots from the oven and garnish with fresh parsley, if desired. Serve hot.
