Ingredients
Scale
- 1 cup whole milk, warmed (105-140°)
- 2 packages (or 5 teaspoons) active dry yeast
- 1/2 cup granulated sugar
- 5 cups all-purpose flour, separated (plus extra for rolling out the dough)
- 3 large eggs, room temperature
- 1/2 cup unsalted butter, room temperature, cut into chunks
- 2 teaspoons fine sea salt
- 1 egg, room temperature, slightly beaten (for sealing edge and egg wash on top)
- 3/4 cup firmly-packed light brown sugar
- 2 tablespoons ground cinnamon
- 1/4 teaspoon fine sea salt
- 1/3 cup unsalted butter, room temperature, separated
- 1 block cream cheese
- 1 cup powdered sugar
- 1 tablespoon unsalted butter
- 1/8 teaspoon vanilla
Instructions
- Add warmed milk to a bowl, sprinkle over yeast, and let stand until foamy (5-7 minutes).
- Add sugar, 4 1/2 cups flour, eggs, butter, and salt to the yeast mixture and mix on low until combined.
- Knead the dough by hand for 10 minutes or using a stand mixer with a dough hook for 5-7 minutes.
- Transfer the dough to an oiled bowl, cover, and let rise until doubled in size (1 1/2 – 2 hours).
- Prepare a greased 9×13” baking dish and make the filling by combining brown sugar, cinnamon, and salt.
- Punch down the dough, roll it out into a rectangle, and spread half of the butter on it.
- Sprinkle half of the cinnamon sugar mixture over the butter and brush the edge with egg wash.
- Roll the dough into a log, pinch the seam, and cut into 6 equal pieces.
- Place the rolls in the greased baking dish and repeat with the remaining dough.
- Cover the rolls and let them rise until doubled in size (about 40 minutes).
- Preheat the oven to 350°F, brush the rolls with egg wash, and bake for 25-30 minutes until golden.
- Whisk icing ingredients until smooth and pour over the warm rolls.
Notes
- Use unflavored dental floss to cut the rolls for clean edges.
- Ensure the milk is warm but not scalding to activate the yeast properly.
- Allow the rolls to cool slightly before icing for better adherence.
