- 1 cup almond flour
- 1/2 cup rolled oats
- 1/2 cup coconut sugar
- 1/2 tsp baking soda
- 1 pinch salt
- 1/4 cup unsweetened applesauce
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup white chocolate chips
- 1 cup fresh raspberries (lightly mashed)
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8” square baking pan by lining it with parchment paper.
- In a large mixing bowl, combine the dry ingredients: almond flour, rolled oats, coconut sugar, baking soda, and salt.
- In another bowl, whisk together the wet ingredients: applesauce, eggs, and vanilla extract until smooth.
- Combine the wet and dry mixtures, stirring until just combined. Avoid overmixing.
- Gently fold in the mashed raspberries and white chocolate chips.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes. Check for doneness with a toothpick; it should come out clean with a few moist crumbs.
- Let the blondies cool for about 15 minutes before cutting them into squares.
