A healthier version of the classic Chicken Alfredo, made with whole wheat fettuccine and a creamy sauce using almond milk.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 2 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 cup unsweetened almond milk (or any milk of your choice)
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon nutmeg (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the whole wheat fettuccine according to the package instructions, salting the water well. Drain and set aside, reserving about 1/2 cup of the pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Season the chicken with salt and pepper, then add to the skillet. Cook for 5-7 minutes until golden brown and cooked through. Remove and set aside.
  3. Add minced garlic to the same skillet and sauté for about 30 seconds until fragrant.
  4. Pour in the chicken broth and bring to a gentle simmer.
  5. Whisk in the almond milk and heat through. Stir in the cornstarch mixture to thicken the sauce, stirring until it bubbles and thickens (about 2-3 minutes).
  6. Reduce heat to low and stir in the grated Parmesan cheese until melted and creamy. Add nutmeg if using.
  7. Add the cooked chicken and drained fettuccine to the skillet, tossing until well coated in the sauce. Adjust seasoning with salt and pepper if needed.
  8. Serve hot, garnished with freshly chopped parsley.
