  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your grill to medium-high heat, around 400°F.
  2. In a large mixing bowl, combine olive oil, garlic powder, onion powder, smoked paprika, dried oregano, salt, black pepper, and fresh lemon juice. Whisk until it forms a marinade.
  3. Pat the chicken thighs dry with paper towels and add them to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes, or up to a couple of hours in the fridge.
  4. Place the chicken thighs skin-side down on the grill and cook for about 6 to 8 minutes until the skin is golden brown and crispy.
  5. Flip the thighs over and grill for another 6 to 8 minutes. Check for doneness with a meat thermometer; the internal temperature should reach 165°F.
  6. Remove the chicken from the grill and let it rest for about 5 minutes before serving.
  7. Sprinkle fresh chopped parsley on top before serving.
