- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh lemon juice
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your grill to medium-high heat, around 400°F.
- In a large mixing bowl, combine olive oil, garlic powder, onion powder, smoked paprika, dried oregano, salt, black pepper, and fresh lemon juice. Whisk until it forms a marinade.
- Pat the chicken thighs dry with paper towels and add them to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes, or up to a couple of hours in the fridge.
- Place the chicken thighs skin-side down on the grill and cook for about 6 to 8 minutes until the skin is golden brown and crispy.
- Flip the thighs over and grill for another 6 to 8 minutes. Check for doneness with a meat thermometer; the internal temperature should reach 165°F.
- Remove the chicken from the grill and let it rest for about 5 minutes before serving.
- Sprinkle fresh chopped parsley on top before serving.
Notes
- For best results, marinate the chicken thighs for a couple of hours.
- Serve with your favorite sides for a complete meal.
