Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a large baking dish or roasting pan.
  2. In a large mixing bowl, combine olive oil, fresh lemon juice, vegetable or chicken broth, minced garlic, dried oregano, salt, black pepper, and red pepper flakes (if using). Whisk until well blended.
  3. Add the halved or quartered baby Yukon Gold potatoes to the bowl and toss until they are well coated in the mixture.
  4. Transfer the potatoes to the prepared baking dish, spreading them out evenly, and pour any remaining lemon mixture over the top.
