- 4 cups fresh peaches (sliced)
- 1 cup sugar (divided)
- 1 tablespoon lemon juice
- 2 teaspoons cornstarch
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/2 cup unsalted butter (melted)
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the sliced peaches with 1/2 cup of sugar, lemon juice, and cornstarch. Allow this mixture to sit for about 10 minutes to release the juices.
- In another bowl, whisk together the flour, the remaining 1/2 cup of sugar, baking powder, and salt. Gradually add the milk and melted butter, stirring until smooth.
- Pour the peach mixture into a greased baking dish.
- Gently spoon the batter over the peaches, covering as much of the fruit as possible.
- Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
- Let the cobbler cool for a bit before serving. It’s delightful topped with vanilla ice cream!
