Description

Grand Dot’s Pineapple Sheet Cake is a delightful and moist cake perfect for summer gatherings, featuring crushed pineapple and a creamy frosting.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 can (20 ounces) crushed pineapple in juice, undrained
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans or walnuts (optional)
  • For the Frosting:
  • 1/2 cup unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons crushed pineapple, drained

Instructions

  1. Preheat your oven to 350°F. Grease and flour a 13×18-inch sheet pan, or line it with parchment paper for easy removal.
  2. In a large mixing bowl, whisk together the flour, sugar, baking soda, and salt until well combined.
  3. In another bowl, combine the vegetable oil, eggs, undrained crushed pineapple, and vanilla extract. Whisk until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in nuts if using.
  5. Pour the batter into the prepared sheet pan and spread it out evenly.
  6. Bake for about 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the cake is baking, prepare the frosting by beating the softened butter and cream cheese until smooth. Gradually add powdered sugar, then stir in vanilla extract and drained crushed pineapple.
  8. Once the cake is done, let it cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  9. Spread the frosting generously over the cooled cake, slice, and serve.

Notes

  • Ensure not to overmix the batter for a tender cake.
  • For a richer flavor, let the cake sit for a few hours before serving.
  • Store leftovers in an airtight container in the refrigerator.
