Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry mixture to the wet mixture, mixing until just combined. Fold in the chocolate chips.
- Drop rounded tablespoons of dough onto the prepared baking sheet and bake for about 10-12 minutes, or until the edges are set.
- While the cookies are baking, combine the coconut, chopped pecans, sweetened condensed milk, butter, and vanilla in a saucepan.
- Cook on medium heat until thickened, stirring constantly.
- Once the cookies have cooled slightly, top each with a generous spoonful of the coconut pecan frosting.
- Let them cool completely, and then indulge in every bite!
