- 1 whole chicken (about 4–5 pounds)
- 1/2 cup unsalted butter, softened
- 1 tablespoon minced garlic (about 4–5 cloves)
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
- 1 tablespoon fresh parsley, chopped
- 1 lemon, halved
- Salt and pepper, to taste
- 1 onion, quartered
- 1 cup chicken broth or water
Instructions
- Preheat your oven to 425°F (220°C). Grab a roasting pan or a large oven-safe skillet and set it aside.
- In a small mixing bowl, combine the softened butter, minced garlic, rosemary, thyme, parsley, salt, and pepper. Mix it all together until you have a nice, fragrant garlic butter.
- Pat the chicken dry with paper towels—this helps get that skin nice and crispy. Carefully loosen the skin over the chicken breast by sliding your fingers underneath it. Be gentle so you don’t tear it!
- Take about half of the garlic butter mixture and spread it under the skin, making sure to cover the breasts evenly. Rub the remaining garlic butter all over the outside of the chicken, making sure to coat it well. Sprinkle a little extra salt and pepper on the skin for good measure.
- Stuff the cavity of the chicken with the lemon halves and onion quarters. This adds flavor and keeps the chicken moist while it roasts.
- Place the chicken breast-side up in the roasting pan. Pour the chicken broth or water into the bottom of the pan to keep things juicy while it cooks.
- Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh. If the skin starts to get too brown, cover it loosely with aluminum foil.
- Once done, remove the chicken from the oven and let it rest for about 15-20 minutes before carving. This allows the juices to redistribute, making for a tender and juicy chicken.
