Description

These Freezer Friendly Egg Muffins with Tater Tots are a delicious and convenient breakfast option that can be made ahead of time and stored in the freezer.


Ingredients

  • 23 frozen tater tots per muffin cup
  • 1/2 lb ground sausage (or crumbled bacon)
  • 6 eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheese
  • Salt & pepper
  • Optional: diced peppers, onions, spinach

Instructions

  1. Preheat oven to 350°F. Spray a muffin tin with nonstick spray.
  2. Add 2–3 tater tots to the bottom of each muffin cup.
  3. Top with cooked sausage (or bacon), cheese, and any veggies.
  4. In a bowl, whisk together eggs, milk, salt, and pepper.
  5. Pour the egg mixture into muffin tins until filled.
  6. Bake uncovered for 25–30 minutes, or until eggs are set and golden on top.
  7. Let cool before removing. Store in fridge or freeze in a zip-top bag.
