These Freezer Friendly Egg Muffins with Tater Tots are a delicious and convenient breakfast option that can be made ahead of time and stored in the freezer.
Ingredients

- 2–3 frozen tater tots per muffin cup
- 1/2 lb ground sausage (or crumbled bacon)
- 6 eggs
- 1/4 cup milk
- 1/2 cup shredded cheese
- Salt & pepper
- Optional: diced peppers, onions, spinach
Instructions
- Preheat oven to 350°F. Spray a muffin tin with nonstick spray.
- Add 2–3 tater tots to the bottom of each muffin cup.
- Top with cooked sausage (or bacon), cheese, and any veggies.
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Pour the egg mixture into muffin tins until filled.
- Bake uncovered for 25–30 minutes, or until eggs are set and golden on top.
- Let cool before removing. Store in fridge or freeze in a zip-top bag.
