- 1 cup whole milk
- 1/2 cup vegetable oil
- 1 teaspoon salt
- 2 cups tapioca flour (also known as tapioca starch)
- 2 large eggs
- 1 cup grated Parmesan cheese (or a mix of cheeses like mozzarella and cheddar)
- 1/2 teaspoon garlic powder (optional)
- 1/4 teaspoon black pepper (optional)
Instructions
- Preheat your oven to 375°F (190°C) and grease a mini muffin tin or line it with paper liners.
- In a medium saucepan, combine the milk, vegetable oil, and salt. Heat it over medium heat until it just starts to boil.
- Once it’s boiling, remove it from the heat and immediately add the tapioca flour. Stir it with a wooden spoon until it forms a sticky dough.
- Let the dough cool for about 15 minutes.
- Add the eggs one at a time, mixing well after each addition.
- Fold in the grated cheese, garlic powder, and black pepper if using. Mix until well combined.
- Scoop the dough into the prepared muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for about 15 to 20 minutes, or until golden brown and puffed up.
- Let them cool in the pan for a few minutes before transferring to a wire rack. Serve warm.
