2 lbs Boneless Skinless Chicken Breast
2 boxes Stovetop Chicken Stuffing Mix
2 cans Cream of Chicken Soup
1 can (14.5 oz) Chicken Broth
Salt & Pepper to taste
Instructions
Spray slow cooker with non-stick cooking spray.
Coat each chicken breast with salt and pepper to taste. If you want a little spice, add a pinch of cayenne! Once coated, lay the chicken down at bottom of the slow cooker.
Pour chicken stuffing mix in the slow cooker on chicken.
In a medium bowl, whisk together 2 cans of cream of chicken soup and 1 can of chicken broth. Pour over stuffing. We recommend lightly mixing the stuffing and soup mixture in a crockpot to help avoid the stuffing sticking to the pan.
Cook on low for 7 hours or high for 4 hours.
Once done, mix up stuffing and soup mixture. Serve as a sandwich with chicken and stuffing inside the bread with a little cranberry jam for a comforting meal.
Notes
This recipe is great for meal prep and can be stored in the refrigerator for a few days.
Feel free to add vegetables like carrots or peas for extra nutrition.
