- 1 lb ground beef or Italian sausage
- 1 medium onion diced
- 3 cloves garlic minced
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes (optional)
- 1 24 oz jar marinara sauce
- 4 cups chicken or beef broth
- 1 14 oz can diced tomatoes
- 8 oz lasagna noodles broken into pieces
- Salt and black pepper to taste
- 1 cup shredded mozzarella cheese
- 1 cup ricotta cheese
- ½ cup grated Parmesan cheese
- Fresh basil or parsley for garnish
Instructions
- In a large pot, cook ground beef with onion over medium heat until browned. Drain excess fat if needed.
- Add garlic, Italian seasoning, and red pepper flakes; cook 1 minute until fragrant.
- Stir in marinara sauce, broth, and diced tomatoes. Bring to a boil.
- Add broken lasagna noodles and cook until tender, about 10–12 minutes. Stir occasionally to prevent sticking.
- Season with salt and black pepper to taste.
- Ladle soup into bowls and top with a dollop of ricotta, a sprinkle of mozzarella, and Parmesan.
- Garnish with fresh basil or parsley before serving.
Notes
- Feel free to substitute ground turkey or chicken for a lighter option.
- For a vegetarian version, omit the meat and add more vegetables.
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
