Description

A simple and delicious chicken and orzo tray bake that is perfect for a hassle-free dinner.


Ingredients

Scale
  • 1 kg Chicken Thighs
  • 250g orzo
  • 2 peppers – chopped
  • 1 onion – chopped
  • 2 cloves garlic – crushed
  • 1 cup of frozen peas
  • 350 ml stock (hot)

Instructions

  1. Preheat the oven to 210 degrees Celsius.
  2. Place the chicken, onions, garlic, and peppers into a large roast tray. Season and drizzle with olive oil.
  3. Roast for 20 minutes.
  4. Remove from the oven and add the dry orzo.
  5. Stir in around the chicken.
  6. Add the stock and stir again.
  7. Turn down the heat to 200 degrees Celsius, place back into the oven for 25 minutes.
  8. Stir in the peas and put back in the oven for 5 minutes.

Notes

  • Ensure the chicken is cooked through before serving.
  • Feel free to add other vegetables as desired.
  • This dish can be made ahead of time and reheated.
