Description
A simple and delicious chicken and orzo tray bake that is perfect for a hassle-free dinner.
Ingredients
Scale
- 1 kg Chicken Thighs
- 250g orzo
- 2 peppers – chopped
- 1 onion – chopped
- 2 cloves garlic – crushed
- 1 cup of frozen peas
- 350 ml stock (hot)
Instructions
- Preheat the oven to 210 degrees Celsius.
- Place the chicken, onions, garlic, and peppers into a large roast tray. Season and drizzle with olive oil.
- Roast for 20 minutes.
- Remove from the oven and add the dry orzo.
- Stir in around the chicken.
- Add the stock and stir again.
- Turn down the heat to 200 degrees Celsius, place back into the oven for 25 minutes.
- Stir in the peas and put back in the oven for 5 minutes.
Notes
- Ensure the chicken is cooked through before serving.
- Feel free to add other vegetables as desired.
- This dish can be made ahead of time and reheated.
