Description
Easter Poke Cake is a delightful spring treat that combines a moist vanilla cake with colorful Jell-O and a fluffy whipped cream topping, perfect for celebrating the Easter holiday.

- 1 box vanilla cake mix (Make according to package directions)
- 1 cup water
- 1/2 cup vegetable oil
- 3 large eggs
- 1 box Jell-O (any flavor) (3 oz)
- 1 cup boiling water
- 1 cup cold water
- 1 tub whipped cream topping (8 oz)
- 1 cup fresh fruit (such as strawberries, blueberries, or kiwi for garnish)
Instructions
- Preheat your oven according to the cake mix package instructions.
- In a mixing bowl, combine the cake mix, water, vegetable oil, and eggs. Mix until smooth.
- Pour the cake batter into a greased 9×13 inch pan and bake according to package instructions until a toothpick inserted in the center comes out clean.
- While the cake is baking, prepare the Jell-O by dissolving the Jell-O powder in 1 cup of boiling water. Stir until fully dissolved and then add 1 cup of cold water. Set aside.
- Once the cake is done baking, remove it from the oven and let it cool for 10 minutes. Using the handle of a wooden spoon or a straw, poke holes all over the cake.
- Slowly pour the prepared Jell-O over the cake, letting it seep into the holes. Cover and refrigerate for at least 2 hours, or until fully set.
- Once the Jell-O has set, spread the whipped cream topping over the cake using a spatula.
- Finish by adorning the cake with fresh fruit on top. Slice, serve, and enjoy!

- Feel free to use any flavor of Jell-O that you prefer.
- For a more colorful cake, use multiple flavors of Jell-O.
- Make sure to refrigerate the cake for the full 2 hours to ensure the Jell-O sets properly.
