A simple and delicious recipe for making sourdough tortillas using an active sourdough starter.
Ingredients

- 1 cup all-purpose flour (or whole wheat/gluten-free flour)
- 1 cup sourdough starter (active and bubbly)
- 1/4 teaspoon salt
- 2 tablespoons olive oil (or melted butter)
Instructions
- In a large mixing bowl, combine the sourdough starter, flour, salt, and olive oil until a shaggy dough forms.
- Transfer the dough onto a lightly floured surface and knead for about 5-7 minutes until smooth. If it feels sticky, sprinkle in a little more flour as needed.
- Cover the dough with a damp cloth and let it rest for 15-20 minutes.
- Divide the dough into 8 equal portions and roll each into a ball.
- On a lightly floured surface, use a rolling pin to roll each ball into a thin circle, about 6-8 inches wide.
- Heat a skillet over medium-high heat.
- Add a tortilla and cook for about 30 seconds on each side or until lightly browned and bubbly.
- Keep warm in a clean towel until all tortillas are cooked.
Notes
- Feel free to experiment with different types of flour.
- Make sure your sourdough starter is active for the best results.
- Store any leftover tortillas in an airtight container.
