- 4 large onions, thinly sliced
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 4 cups beef broth (or vegetable broth for a vegetarian option)
- 1 teaspoon sugar
- 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
- Salt and pepper to taste
- 1 baguette, sliced
- 1.5 cups grated Gruyère cheese (or Swiss cheese)
Instructions
- In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, for about 25-30 minutes or until the onions are golden brown. Add the sugar halfway through to enhance the caramelization.
- Once the onions are caramelized, add the beef broth, thyme, salt, and pepper. Bring the mixture to a gentle simmer. Let it cook for an additional 20-30 minutes to let the flavors meld.
- While the soup is simmering, preheat your oven to 350°F (175°C). Place the bread slices on a baking sheet and toast them in the oven for about 10 minutes, until they are golden brown.
- Ladle the hot soup into oven-safe bowls. Top each bowl with a slice of toasted bread and sprinkle generously with grated cheese.
- Place the bowls under the broiler for 3-5 minutes, until the cheese is bubbling and golden brown. Keep a close eye on them to avoid burning!
- Carefully remove the bowls from the oven and let them cool for a minute before serving. Enjoy while hot!

- Yellow onions are traditional, but sweet onions can be used for a sweeter flavor.
