  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • Salt and pepper to taste
  • 1 baguette, sliced
  • 1.5 cups grated Gruyère cheese (or Swiss cheese)

Instructions

  1. In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, for about 25-30 minutes or until the onions are golden brown. Add the sugar halfway through to enhance the caramelization.
  2. Once the onions are caramelized, add the beef broth, thyme, salt, and pepper. Bring the mixture to a gentle simmer. Let it cook for an additional 20-30 minutes to let the flavors meld.
  3. While the soup is simmering, preheat your oven to 350°F (175°C). Place the bread slices on a baking sheet and toast them in the oven for about 10 minutes, until they are golden brown.
  4. Ladle the hot soup into oven-safe bowls. Top each bowl with a slice of toasted bread and sprinkle generously with grated cheese.
  5. Place the bowls under the broiler for 3-5 minutes, until the cheese is bubbling and golden brown. Keep a close eye on them to avoid burning!
