- 1.5 cups crushed graham crackers
- 0.5 cups unsalted butter, melted
- 0.25 cups sugar
- 24 oz cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1.5 cups fresh blackberries
- 0.25 cups blackberry jam (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the crushed graham crackers, melted butter, and sugar until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan.
- Bake the crust for 10 minutes, then remove and let cool.
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Add in the sugar and vanilla extract, mixing until well combined.
- Add the eggs one at a time, beating gently after each addition until just combined.
- Pour the filling over the pre-baked crust and smooth the top with a spatula.
- Bake at 325°F (160°C) for about 55-60 minutes, or until the center is set and slightly wobbly.
- Turn off the oven and leave the cheesecake inside for another hour.
- Allow the cheesecake to cool completely at room temperature.
- Refrigerate for at least 4 hours or overnight.
- Before serving, top with fresh blackberries and drizzle with blackberry jam if desired.
