Ingredients

  • 1 whole chicken (about 3 to 4 pounds), cleaned and cut into pieces
  • 12 cups water
  • 1 medium onion, quartered
  • 4 cloves garlic, smashed
  • 1-inch piece of ginger, sliced
  • 2 green onions, cut into large pieces
  • 1 tablespoon salt (adjust to taste)
  • 1 teaspoon black peppercorns
  • 1 tablespoon sesame oil
  • 1 cup cooked rice (for serving)
  • Chopped green onions (for garnish)
  • Salt and pepper (to taste)

Instructions

  1. Rinse the chicken pieces under cold water to remove impurities.
  2. In a large pot, combine the chicken and 12 cups of water. Bring to a boil over medium-high heat.
  3. Skim off any foam that rises to the top to keep the soup clear.
  4. Add the quartered onion, smashed garlic, sliced ginger, and green onion pieces to the pot.
  5. Toss in the salt and black peppercorns.
  6. Lower the heat to a simmer and cover the pot. Let it simmer for about 1 to 1.5 hours, or until the chicken is tender.
  7. Carefully remove the chicken from the pot and set aside to cool slightly.
  8. Strain the broth through a fine-mesh sieve to remove solids and return the clear broth to the pot.
  9. Shred the chicken into bite-sized pieces, discarding the skin and bones, and return it to the pot with the broth.
  10. Stir in the sesame oil and adjust seasoning with more salt and pepper if needed.
  11. Let it simmer for another 10 minutes to meld the flavors.
  12. Serve hot over a scoop of cooked rice and garnish with chopped green onions.
