  • 2 pounds boneless, skinless chicken thighs
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated

  • 2 teaspoons ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1 can (14 ounces) diced tomatoes, undrained
  • 1 can (14 ounces) coconut milk
  • 1 pound fresh spinach, washed and roughly chopped (or 10 ounces frozen spinach, thawed and drained)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro, for garnish
  • Cooked basmati rice or naan, for serving

Instructions

  1. Heat the olive oil in a skillet over medium heat. Add the chopped onion and sauté until soft and translucent, about 5-7 minutes.
  2. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
  3. In a large bowl, combine the chicken thighs with the cumin, coriander, turmeric, garam masala, and red chili powder, ensuring the chicken is well-coated.
  4. Transfer the seasoned chicken to the crockpot. Pour in the sautéed onion, garlic, and ginger mixture, followed by the diced tomatoes and coconut milk. Stir gently to combine.
  5. Add the fresh spinach to the crockpot, or ensure frozen spinach is well-drained before adding. Season with salt and pepper to taste.
  6. Cover the crockpot and set it to low for 6 to 8 hours, or on high for about 4 hours, until the chicken is tender and easily shredded.
  7. Once cooked, stir to mix everything together. Taste and adjust seasoning if needed. For a thicker consistency, cook uncovered for the last 30 minutes.
  8. Serve over basmati rice or with naan, garnished with fresh cilantro.
