Crispy Baked Cheesy Squash Rounds are a delicious and healthy snack or side dish, featuring fresh yellow squash coated in a cheesy breadcrumb mixture and baked to perfection.

- 2 medium yellow squash, sliced into ¼ inch rounds
- 1 cup breadcrumbs (panko works great!)
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp freshly ground black pepper
- 1 large egg, beaten
- as needed Olive oil spray
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and slice the yellow squash into ¼ inch rounds.
- In a shallow bowl, mix together the breadcrumbs, mozzarella cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper.
- Dip each squash round into the beaten egg, letting excess egg drip off.
- Press the squash rounds into the breadcrumb mixture to adhere the coating.
- Place the coated rounds on the prepared baking sheet and repeat until all squash slices are coated.
- Lightly spray the tops of the coated rounds with olive oil spray.
- Bake in the preheated oven for 20 minutes, flipping the rounds halfway through.
- Remove from the oven when golden brown and let cool slightly before serving.
Notes
- Choose fresh, firm squash for the best texture.
- Panko breadcrumbs will add extra crunch to the rounds.
- You can substitute mozzarella cheese with other types of cheese if desired.
